Grilled Chicken Breasts

 

This is a very easy, very quick dish to make for your family or for company. You can marinate the chicken breasts for as little as 30 minutes and still end up with juicy, flavorful meat. Or, place the chicken in the marinade and refrigerate overnight, for an added flavor punch and extra-easy preparation the next day. You can use chopped garlic in place of the garlic juice, but the pieces may burn on the grill. I always have a small bottle of chopped garlic in the fridge and I just tilt it to release enough juice for this recipe.

 

Ingredients

 

4 single boneless, skinless chicken breasts (about 2 pounds)
1/4 cup olive oil
juice of 1/2 lime
1/4 teaspoon garlic juice
salt and pepper

 
  1. Mix the olive oil, lime juice, garlic juice, and salt and pepper in a small bowl.
  2. Place the breasts and the marinade in a zippered plastic bag and marinate up to an hour at room temperature or up to a day in the refrigerator.
  3. Prepare a gas or charcoal grill and cook the chicken breasts at medium-high heat (direct flame, covered top) for 5-8 minutes on each side. Do not overcook or the chicken will be dry.
  4. Remove one breast and cut open to check for doneness. Continue cooking if necessary or remove to serving platter and garnish with lime slices or parsley sprigs, if desired.
