Aunt Raela's Passover Strawberry Freeze

Adele Bacow

Food Editor's notes:  This only has a few ingredients, is easy to make, and will be a very pleasant addition to your seder meal.  In fact, it is a great dessert for year-round.  It's refreshing and healthy (and pareve!), like ice cream but with a lighter, mousse-like texture.  The strawberry flavor shines through - and Adele says this can be made with raspberries as well.  Serve this alone, with some added fresh fruit, or accompanying a slice of fluffy Passover sponge cake!

Ingredients

One egg white
One pinch salt
One tablespoon lemon juice
1/2 cup sugar
One cup fresh strawberries or raspberries

Beat egg white until foamy and add salt.  Continue to beat and add sugar.  When peaked, add sliced or crushed strawberries and lemon juice.  Continue to beat for 15 minutes until peaked.  Store in freezer.

Enjoy!

It's Trayf!

An interesting article on kosher vs. non-kosher, in our food and in our lives.  A different take on this topic - definitely something to think about!
